Risotto patties

Ingredients

patties

  • 3 slices grain bread, Or any other bread
  • 2 eggs, lightly whisked
  • plain flour, as required
  • 1 portion Leftover risotto, Any flavour
  • olive oil, as required

Recipe's preparation

  1. Put bread slices into TM for 3 seconds / speed 7 or until crumb size achieved. Place into shallow bowl


  2. Crack egg into separate bowl lightly whisked and place flour into a separate bowl.

  3. Form leftover risotto into patties and coat in the flour first, dust off excess flour and dip into the egg so that it is coated and let excess run off. Lastly coat in the bread crumb until well covered

  4. Heat the olive oil in non stick pan and fry patties until golden

Tip

I have used the apricot chicken risotto but any leftover risotto can be used and can be used as a vegetarian burger pattie

    I also made some into arancini balls by putting a cube of cheese into the centre and making them into balls and shallow fry them. Not the healthiest of meals but SO yummy!
