Sweet Potato, Cheese & Bacon Waffles

  • 250 g cheese, I used Colby & Mozzarella
  • 600-700 g sweet potato, Cut into pieces
  • 4 shallots, Sliced
  • 150 g bacon, Cubed
  • 5 large eggs
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder
  • 1/2 teaspoon paprika
  • Oil or butter for frying

Recipe's preparation

  1. 1- Place chunks of cheese in bowl and grate 6-8 sec/ sp7, set aside.
    2- Without washing bowl place chunks of sweet potato in bowl and grate 10sec/ sp7
    3- Add cheese back into bowl and rest of the ingredients and mix Counter-clockwise operation 10sec/ sp5/ aiding with the spatula if needed.
    4- Cook in waffle iron until dark golden on both sides.
    5- Serve hot or cold, great for lunch boxes.

Tip

*You can cook these as fritters in frying pan or in a waffle iron.
*I just use a mix of whatever cheese I have handy
*Waffles may seem soft to pick up at first but will firm up as the cheese cools.
*When using waffle iron I find it doesn't need a lot of greasing as the fat from the cheese and bacon is enough but start off with a lightly greased pan just in case.
