Walnut and cranberry granola

Ingredients

1000 g

Granola

  • 100 g walnuts
  • 125 g Maple syrup
  • 125 g olive oil
  • 400 g rolled oats
  • 40 g pepitas
  • 20 g Coconut Flakes (or shredded)
  • 30 g chia seeds
  • 200 g dried cranberries and raisins
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 tablespoon brown sugar

Recipe's preparation

  1. 1. Pre heat oven to 150C.

    2. Line 2 shallow baking trays with baking paper.

    3. Chop walnuts roughly 3 seconds/speed 4, & put aside.

    4. Add oil and maple syrup to TM,  cook 3 mins/100/speed 1, liquid should be just starting to bubble.

    5.Add oats,quinoa,nuts,pepitas,coconut,chia,cinnamon,salt, brown sugar and dried fruits to TM and mix 3 mins/Counter-clockwise operation/Gentle stir setting or until well combined.

    6. Spread granola mix on prepared trays and bake in oven for 30-40 mins. Stir every 10 minutes to prevent over cooking fruit. Leave on trays to cool completely.

    7. Store in airtight container. Serve as breakfast cereal with milk or yoghurt.
