Broccolini & Feta Fritters

  • 1 bunch broccolini
  • 35 g shallots, approx 3 small shallots
  • 40 g quinoa
  • 100 g feta
  • 5 g parsley, (or slightly less)
  • 5 g chives, (or slightly less)
  • 3 eggs
  • Salt and pepper, to taste

Recipe's preparation

  1. Add quinoa to dry bowl.  Mill speed 9, 1 minute.   Set aside.

    Add 500g water to bowl.  Cut broccolini in half and place in steaming basket.  Steam 100'C, 9 minutes, speed 1.  

    Refresh broccolini under cold water, drain water from bowl.  

    Add parsley, chives and shallots to bowl, chop speed 5, 8 seconds. 

    Add broccolini and chop speed 5, 3 seconds.  Add flour and crumble feta to bowl.  Mix speed 3, Counter-clockwise operation, 3 seconds. 

    Quickly whisk eggs and add to bowl.  Combine speed 4, Counter-clockwise operation, 2 seconds.  Do not overmix the eggs or your fritters will take too long to cook through and will become rubbery.

    Heat fry pan, add butter or oil and fry in dolloped tablespoons for about 1.5 minutes each side.

Tip

If you don't have feta cheese, ordinary cheddar cheese is also completely yummy. 

You can substitue the quinoa flour for any other flour you have or would like to make, you will just need approx 3 tablespoons of your choice.

    So glad I tried this recipe! Great way to incorporate greens into my snacks. Would go well with sweet chilli or mint raita but nice by themselves too. Despite the huge shards of broccolini, the fritters hold together really well once you start cooking. Mine turned out really flat and didn't fluff up at all like the picture above but oh well. I wouldn't want to eat this every day but they definitely have a nice salty and veggie flavour.

    Seriously Yum!!

    I put these on a flat bread toastie maker to warm up for breakfast the next day and delicious!!!  They Remind me of savoury pikelets.
