Cauliflower Mornay

  • 1 cauliflower, Whole, clean
  • 4 level tbsp Butter
  • 4 level tbsp plain flour
  • 1/2 level tsp Nutmeg, Grated
  • 250 grams Milk
  • 250 grams liquid vegetable stock
  • 1/8 level tsp cayenne pepper
  • 90 gram cheese, Grated, tasty

Recipe's preparation

  1. Wash cauliflower thoroughly and remove all but a few small leaves. Wrap well in cling wrap and place upside down in microwave. Microwave on high for 4 mins. Turn right-side up and microwave for another 4 mins. Allow to rest for 5 mins before removing cling wrap and placing upright in small casserole or glass serving dish.
  2. Meanwhile add butter, flour and nutmeg to TM bowl and sauté on Varoma, 3mins, Sp1. Butter and flour mixture should be browned.
  3. Add milk and vegetable stock (hot). Cook 100deg, 7min, Sp1, adding cayenne pepper while mixing. Ensure mixture has boiled and thickened.
  4. Add cheese and mix for a further 2 minutes at 90deg, Sp1. Pour sauce over cauliflower in serving dish. Sprinkle with turmeric to taste
