Chickpea stuffed zucchini

  • 2 pieces zucchini, Cut lengthwise, filling removed
  • 1 can Canned Chickpeas, Drained and rinsed
  • 100 g cherry tomatoes, Cut in halfs
  • 1 heaped tablespoons tomato paste
  • 1 tsp sweet paprika
  • 1 tsp Garlic powder
  • 1 tsp salt
  • 1 pinch pepper, ground
  • 1/2 tsp chilli flake, dried
  • 120 g cheese
  • 1 tbsp olive oil

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

  1. Preheat oven to 200° fan forced.
    Prepare zucchini and lay out gonna backing tray with backing paper.
    Add cubed cheese to Chop 5 seconds speed 8. Place in another bowl and set aside.
    Place all other ingredients except tomatoes in and chop 5 seconds speed 5. Then add tomatoes and half of the cheese and chop 3 seconds speed 4.
    Stuff zucchini with the mixture and top with remaining cheese.
    Bake 20 minutes or until cheese is melted and zucchini cooked.
