CLONE OF PUMPKIN, PINE NUTS AND SPINACH RISOTTO
- 1 medium onion, quartered
- 2 cloves garlic, halved
- 40 g Ghee
- 50 g extra virgin olive oil
- 320 g arborio rice
- 2 tablespoon Concentrated vegetable stock
- 250 g pumpkin
- 80 g toasted pine nuts or chopped bunya pine nuts
- 1 bunch Fresh english spinach leaves
- 720 g water
- to taste pepper

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place the onion and garlic into the TMX bowl chop 3 sec/speed 5
Add the ghee and oil and saute 3 minutes/120c/speed 1. While it is sauteing chop the pumpkin into 1 cm cubes
Insert the butterfly whisk and add the rice 3 minutes/120c/speed 1.5 without the measuring cup
Scrape the bowl with your spatula and then add your stock, pumpkin, pine/bunya nuts, spinach leaves and water, cook 18 minutes/100c/"Counter-clockwise operation" /speed 1.5, place simmering basket instead of MC onto mixing bowl lid
Transfer into your Thermoserver and rest for 5 minutes to thicken then serve. If you don't have the large Thermoserver, then set for 5 minutes/0c/"Counter-clockwise operation" /speed 0.5
