- 3 medium to large eggplants, (Peeled and sliced length ways 1cm in width)
- 1 butternut pumpkin, (slice into 1 cm thick slices)
- 500 g water
- 100 g feta cheese (add more if preferred)

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
1. Preheat oven to 200C.
2. Place salt onto sliced eggplant. Leave for 10 mins.
2. Place water into bowl. Place pumpkin into varoma. Cook for 20 mins, Varoma and speed 1.
3. Heat oil in fry pan and add sliced eggplant. Flip and cook until soft. Set aside.
4. Once pumpkin is cooked. Discard water and place cooked pumpkin into bowl. Blitz on speed 9 for 20 secs. Repeat until smooth.
5. Place 1 heaped tablespoon on end of eggplant with sprinkles of feta and roll up into a cannelloni. Place into baking tray. Once all done. Pour Huevos Sauce over the cannelloni and place into oven.
6. Bake for 20 to 30 mins.
7. Remove and serve with greek style or traditional yogurt.
