GF Fritters - Zucchini and Halloumi

Ingredients

Fritters

  • 3-4 stalks parsley
  • 1 brown onion
  • 2 Medium Zuchinnis, (approx 300g)
  • 1 Cup Frozen Corn Kernels
  • 180 g Haloumi
  • 2 eggs
  • 80 g Gluten Free SR Flour
  • salt/pepper
  • Oil for frying

Recipe's preparation

  1. Chop parsley and onion - speed 7 / 3 seconds.  

    Scrape out into a separate bowl and set aside.

  2. Roughly chop zucchini and place into TM bowl.

    Chop - speed 5 / 2 seconds until evenly grated.

    Place zucchini into basket and squeeze excess liquid (try pressing with a flat bottomed item that fits inside the TM basket).

  3. Roughly chop halloumi and add to bowl. Chop - speed 5 / 4 seconds. 

  4. Add corn kernels into TM Bowl with halloumi.

  5. Add all other ingredients to bowl - including onion/parsley and drained zucchini.

    Season with salt and pepper.

    Mix on Reverse Counter-clockwise operation - speed 4 / 10-15 seconds or until combined.

    Check and scrape down with spatula if needed (another quick gentle mix to combine). 

  6. Add a little more flour if required to make a thick batter - this can be required depending on the type of GF flour you use.

  7. Shallow fry in oil on medium heat. 3 minutes on each side or until golden brown.
