  • 100 g block parmesan
  • 1 onion peeled & halved
  • 1 clove garlic, peeled
  • 3 leeks, white part only, roughly chopped
  • 50 g olive oil
  • 300 g pearled spelt
  • 125 g dry white wine
  • 1 l water
  • 2 tbsp vegetable stock concentrate
  • 1 tbsp fresh thyme leaves
  • pepper to taste
  • 4 bunch baby broccoli, use top only, save stems for stir fry or soup

Recipe's preparation

  1. Place parmesan in TM bowl and process for 10 seconds, speed 9. Set aside

    Place onion, garlic & leek in TM bowl and process for 4-5 seconds, speed 6-7

    Add oil and saute for 5 minutes, 100C, speed 1 with MC off

    Add spelt and wine and saute for 2 minutes, 100C, reverse, speed 1

    Add water, stock, thyme & pepper to taste and cook for 18 minutes, 100C, reverse, speed 1-2 with steaming basket on top

    When cooked, pour into Thermoserver (oval best) - baby spinach on the bottom.

    Rinse TM bowl and add 500ml boiling water

    Place broccoli in Varoma and steam for 3-4 minutes.

    Add broccoli to Thermoserver with a good dash of parmesan and mix

    Serve with additional parmesan and salt & pepper to taste

Tip

If you want to adapt this recipe to cater for a fructose free friend, substitute the leek with a bunch of spring onions, green part only
