Ingredients

Macaroni Cheese

  • 1 clove garlic
  • 1 onion, (about180g)
  • 20 g olive oil
  • 200 g pumpkin
  • 100 g cauliflower
  • 250 g water
  • 1 tablespoon Vegetable stock paste
  • 1 teaspoon Dijon mustard
  • 40 g Cashews, raw
  • 50 g nutritional yeast
  • 250 g macaroni

Recipe's preparation

    Macaroni Cheese
  1. Place Garlic and Onion into Mixing Bowl - 3 sec / speed 5 - MC ON.

  2. Add Oil - 2 min / Varoma / speed 2.

  3. Add Pumpkin and Cauliflower - 15 sec / speed 7 - MC ON.

  4. Add Water, Veg. Stock Paste, Dijon - 20 min /100C / speed 1 - sim. basket ON.

    While Thermomix is cooking ...

    Boil 2 litres water in the kettle.

    Add Macaroni to your ThermoServer.

    Pour boiling water over Macaroni. Stir. Put Lid on ThermoServer.

     

  5. To the Thermomix Bowl, Add Cashews - 1 min / speed 5-9, increasing speed gradually - MC ON.

    While thermomix is pureeing ...

    Drain Macaroni through Simmering Basket and return Macaroni to the ThermoServer and put the Lid on.

  6. To the Thermomix Bowl, Add Nutritrional Yeast - 10 sec / speed 5 - MC ON.

  7. Pour over the Macaroni in the ThermoServer. Stir through.

    Enjoy!!!

Tip

Find Nutritional Yeast at Health Food Shops or the Supermarket.

If you have an extra Simmering Basket, place it in your ThermoServer and put the Macaroni into the simmering basket.  This will make draining very easy.
