Moroccan Salad

Ingredients

Salad

  • 3 --- Whole Shallots, roots removed, finely slicd
  • 4 sprigs coriander, cut leaves from stems; finely chop stems
  • 400 g tinned chickpeas, rinsed and drained
  • 3 tbsp currants
  • 200 g Firm Feta Cheese, pref. goat or sheep, crumbled
  • 2 tomatoes, diced
  • 1 tsp whole coriander seeds
  • 3/4 tsp whole cumin seeds
  • 1/2 tsp Chilli powder or paste, optional
  • 30 g olive oil
  • 1 lemon, juice only
  • 1/2 tsp pink salt, Himalayan or Murray River
  • pepper, to taste
  • 3 large carrots, tops off, roughly chopped
  • 2 sprigs mint, leaves only, about 8 large leaves

Recipe's preparation

    Salad
  1. 1. Place crumbled feta and chopped tomatoes into salad serving dish. Set aside.

  2. 2. With TM Closed lid turn to speed 8. Drop coriander and cumin seeds through hole and quickly put mc in place. Continue to mill spices for 30 secs.

  3. 3. Add oil and chilli if using. Saute 3 mins 120c speed 1.

  4. 4. Add mint and coriander. Chop 5 secs speed 7.

  5. 5. Add carrot, chop 3 secs speed 5.

  6. 6. Add lemon juice, chickpeas, shallots, currants, salt and pepper and combine 5secs Counter-clockwise operation speed 3. Transfer to serving dish.

  7. 7. Toss all ingredients together in the serving dish.

    Very tasty salad and great for something different!  I didn't have currents, so added sultanas instead. Served it on spinach leaves and really enjoyed it!  It would be even better with couscous! Thanks for a great recipe!
