Palak Paneer

  • 250 gram fresh spinach leaves, leaves only
  • 3 garlic clove
  • 15 g fresh ginger
  • 1 green chilli
  • Few sprigs fresh coriander, leaves only
  • 150 g brown onion, quartered
  • 80 g tomato, diced
  • 30 g oil
  • 1.5 tsp salt
  • 1/8 tsp ground turmeric
  • 1/2 tsp garam masala
  • 200 g paneer, cubed
  • ghee or oil, as needed

  • 15 g fresh ginger
  • Few sprigs fresh coriander, leaves only

  • 150 g brown onion, quartered
  • 80 g tomato, diced
  • 1/2 tsp cumin seeds
  • 1 tsp salt
  • 1/8 tsp ground turmeric
  • 2 tbsp Ghee
  • 200 g paneer, cut into small cubes

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Take washed spinach in a thermoserver bowl and add boiling water to it. Let it sit for 7-10 minutes. Drain and add to the Thermomix bowl.

    3. To the mixing bowl, add coriander, chili, ginger and 1 clove of garlic along with the spinach, 100g water, 2 ice cubes and Blendfor 2 minutes.

    4. Keep the blended spinach mixture aside. Do not clean the mixing bowl.

    5. To the mixing bowl add onion and chop 3 sec speed 5. Scrape down the sides. Chop another 2 sec speed 5.

    6. Add oil and cook 5 min 120 deg speed 2 Counter-clockwise operation with splash guard in place of MC.

    7. Scrape sides and base of the bowl and cook another 5 min 120 deg speed 2 Counter-clockwise operation with splash guard in place of MC.

    8. Add tomato, salt and turmeric and cook again 5 min 120 deg speed 2 Counter-clockwise operation with splash guard in place of MC.

    9. Add the spinach mixture and cook briefly for 2 min 90 deg speed 2. Add a pinch of garam masala and stir to combine. Transfer to a serving bowl.

    9. Meanwhile, in a pan, add the ghee and lightly fry the paneer till they are golden brown. Then rest them in a bowl of little water. Add the paneer to the spinach dish.

    For the tempering (optional)
    Add a spoonful of ghee to the pan and fry the 2 garlic cloves (sliced) until golden. Then add the cumin seeds and add this to the palak paneer before serving.
