Pantry Lentil Curry

  • 2 heaped teaspoons coriander seeds
  • 2 heaped teaspoons cummin seeds
  • 50 grams olive oil
  • 15 grams fresh ginger, peeled
  • 2 cloves garlic, peeled
  • 100 grams onion, peeled, quartered
  • 150 grams red lentils
  • 400 grams coconut milk
  • half level tbsp Vegetable stock paste
  • 400 grams water

Recipe's preparation

  1. Add the coriander and cummin to the mixing bowl. Grind for 10 seconds on Speed 9.
  2. Add olive oil, ginger and garlic. Chop for 5 seconds on Speed 8.Add onion. Chop for seconds on Speed 4.
  3. Add onion. Chop for seconds on Speed 4.
  4. Cook for 5 minutes on Varoma, Speed 2.
  5. Add the coconut milk, vegetable stock paste, water and lentils.Cook for 20 minutes at 95 degrees, Speed 1.
  6. Check of the lentils are cooked. If not, cook for another 3 minutes.
  7. Add salt if desired.Serve with rice, (garnished with coriander leaves or chopped spring onion and a wedge of lemon if you have them), and with pappadams on the side.

Tip

We add fresh or thawed frozen spinach and cook for another 2 minutes from the end to make this a quick, healthy, hearty weeknight dinner.
