Pumpkin Curry

  • 50 g dates
  • 1 onion
  • 2 cloves garlic
  • 2-3 tbsp red curry paste
  • 10 g olive oil
  • 300 g sweet potato, cut into 2cm pieces
  • 600 g coconut cream
  • 650 g butternut pumpkin, cut into 2cm pieces
  • 150 g water
  • 250 g Zuchini, cut into 2cm pieces
  • 200 g asparagus, cut into 3cm sticks

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Pumpkin Curry
  1. 1. Place dates in Thermomix bowl and chop for 6 seconds / speed 5. Set aside

    2. Place onion and garlic in Thermomix bowl and chop for 3 seconds / speed 7

    3. Add red curry paste and olive oil and saute for 3minutes / varoma / speed 1

    4. Add sweet potato, dates and coconut cream and cook for 3 minutes / 100C / Counter-clockwise operation speed 1

    5. Add pumpkin and water and cook for 3 min / 100C / Counter-clockwise operation speed 1

    6. Add zucchini and asparagus and cook for a further 10-15 minutes / 100C / Counter-clockwise operation speed 1

    I used baby spinach instead of the asparagus and doubled the recipe so simmered it on the stovetop to finish it. I used home made red curry paste and it turned out really well

    Used yellow curry paste, as I didn't have red curry paste at home. And forgot to put on reverse and puréed pumpkinLol
    So Yellow Pumpkin Curry Soup was excellent😜😂

    Made this and my family loved it, the only thing I did was not follow the timing and probably over cooked/heated it which made the potatoe and pumpkin turn to mush...I should have followed the exact timing !

    Pumpkin curry - Enjoyed it however I would only stick to 2 tablespoons of red curry paste. Very versatile - you can use anything in it. I cooked for a few minutes longer.

    This was delicious. I added a tablespoon of vegetable stock paste and used broccoli instead of asparagus as it was all I had. Also used a 400g tin of coconut cream and just made up the rest with water to save having to open a second tin. Thank you for a great recipe. The whole family loved it.
