Ingredients

Pumpkin, Sun Dried Tomatoes, Spinach and Feta.

  • 1 onion
  • 2 cloves garlic
  • 1 chilli
  • 300g arborio rice
  • 6-8 Semi sun dried tomatoes - chopped
  • 300g Pumpkin - cubed
  • 80g white wine
  • 2 heaped tablespoons veggie stock
  • 950g water
  • 60g snow peas
  • 100g feta
  • 100g Baby Spinach Leaves
  • bunch basil
  • 40 extra virgin oilive oil

Recipe's preparation

    Pumpkin, Sun Dried Tomatoes, Spinach and Feta Risotto
  1. Place onions, garlic and chilli in TM bowl. Chop 3 seconds, speed 5.

  2. Add rice and oil and fry 3 minutes, 100 degrees, speed 1.

  3. Add tomatoes, pumpkin, basil, wine, stock and water.  Cook 16 minutes, 100 degrees, reverse Counter-clockwise operation, speed soft Gentle stir setting.

  4. Add snow peas and feta. Cook 2  minutes, 100 degrees, reverse Counter-clockwise operation, speed soft Gentle stir setting.

  5. Place spinach in base of thermo server. Pour risotto over it and stir through.

    leave to stand for 10 minutes

    Enjoyable risotto. I doubled the quantity of pumpkin and will remember to increase the cooking time by 2-4mins next time. I'll also reduce the rice to 200gram. Will make again.

    This was super tasty, one that I'll most definitely be making on a regular basis.

    In the step where adding the aborio rice i used 3min/100°/Counter-clockwise operation/speed 1 so my rice didn't get broken up. My pumpkin was chopped about 1cm x1cm and that was perfect for the cooking time. The only thing i left out was the chilli as i didn't have it but also have a 4yo & almost 3 yo to keep happy too  tmrc_emoticons.D

    Made this risotto last night and I was extremely happy with the result.  It was my first risotto attempt in the TX and I couldn't be happier.  I did add additional sun-dried tomatoes and a little extra stock because we like our meals to have heaps of flavour.  Well done, thank you

    Hi , I'm so sorry you had problems. I know it does create a very large amount and when over full it may not stir properly. Give it a stir with your spatula if you are not sure. i do recommend a good quality arborio rice, as you may know the arborio rice does need to be sautéed for risotto and perhaps when sauteing it needs to be put in reverse! The pumpkin needs to be chopped into 'small' cubes ( more recipe tweaking to be done!)

    This recipe was a complete disaster for me, sorry. THe pumpkin didn't cook, I had to half the mixture and cook for another twenty minutes. By adding the rice and oil together, the rice milled a little bit, do the end result was very mushy. The flavours are there, I just think the method needs some tweaking. Maybe chop the pumpkin first in the thermomix and then add the rice after the oil, onion, artic and chilli have sauté.

    I have had a few comments on liquid - the best rice to get is either 'Principo' or Woolworths home brand as they are proper Italian arborio which for some reason has a higher absorbency hence the need for the liquid.

    i love that you have adapted it. You should put the changes on your own recipe ( you can acknowledge the original)  this is a great recipe to make all kinds of changes to! Thanks for your comment - Kate

    Great. I was looking for something to make from my very lean pantry and fridge content the day we returned from holidays. I did a search on arborio and pumpkin and this popped up and took my fancy. Doctored it a bit to work around what I had which like adding bacon, no snow peas or feta and using chicken stock. Fantastic base and will be keeping it in my files. Will cook to recipe ingredients soon!

    Thank you for this!! I had to ammend for FODMAPs and other intollerances, so no onion, no chilli, no tomatoes. I used goats cheese instead of fetta. I reckon there was a touch too much water (probably because of omitting those ingredients!) as it was a bit gluggy, but the taste was AWESOME!!! Looking forward to trying again.
