Tacos - raw

Ingredients

Taco Meat

  • 200 grams walnuts
  • 40 grams coconut aminos or tamari
  • 2 tsp ground cumin
  • 1 tsp Ground Coriander

Tomato Marinara Sauce

  • 50 grams sun-dried tomatoes, soaked in water for 15 mins
  • 150 grams tomatoes, chopped in half
  • 50 grams Capsicum, roughly chopped
  • 1 tbsp extra virgin olive oil
  • 1 clove garlic
  • 2 tbsp raisins or dates
  • 2 tsp Italian dried herbs

Cashew Cream

  • 120 grams Cashews
  • 10 grams red capsicum, roughly chopped
  • 20 grams extra virgin olive oil
  • 25 grams water
  • 1 tsp sea salt
  • 1/2 tsp curry powder
  • 1/4 tsp turmeric powder, ground

Extra ingredients

  • 4 large cos lettuce leaves
  • 1 carrot, julienned
  • 1 Corn cob, kernels removed with knife
  • 1/2 Capsicum, cut into small pieces
  • 1 cucumber, cut into small pieces
  • 1 handful alfalfa sprouts

Recipe's preparation

    Walnut Meat
  1. Place all ingredients into TM bowl.  Closed lid Press Turbo briefly 2-3 times / 1 sec.


    Put aside in a bowl.


     

  2. Tomato Marinara Sauce
  3. Place all ingredients into TM bowl. Blend 20 sec / speed 6


    Put aside in a bowl.


     


     

  4. Cashew Cream
  5. Place cashews in TM bowl. Grind for 10 sec/ speed 9.


    Place rest of ingredients into TM bowl. Blend 15 sec / speed 6.


    Put in a bowl.


     


     

  6. Assembly
  7. Place some taco meat on each cos lettuce leaf. Add a small portion of each of the vegetables over the taco meat. Top with some of the tomato marinara mix, then the cashew cream and finally the alfalfa sprouts. Fold the cos lettuce leaf over to create a roll.

Tip

Can also add other vegetables eg mushrooms, squash, green capsicum.

This can be made as a starter or 2-3 tacos can be enough for a main course. Quantities can be easily doubled if making as a main course for a family.
