- 2 clove garlic
- 1 red onion
- 15 g coconut oil
- 520 g pumpkin (peeled and roughly chopped)
- 1 teaspoon ground ginger
- 1 teaspoon Ground Coriander
- 1/2 teaspoon ground cardamon
- 1/4 teaspoon cayenne pepper
- 10-12 fresh or dried curry leaves
- 1 cinnamon stick
- 1 stalk lemongrass (white part only)
- 3 ripe tomatoes (roughly chopped)
- 1 tablespoon vegetable concentrated stock
- 500 g water
- 400 g can of chickpeas (drained)
- 250 g broccoli
- 150 g grean beans
- salt and pepper to taste
- 1/4 cup pepita seeds for serving

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
1. Place garlic and onion into bowl and chop on spd 7 for 3 secs.
2. Add oil and saute on 100C, 3 mins on spd 1.
3. Add pumpkin and spices, then saute 4 mins, 100C, Reverse and spd 1.
4. Add leaves, cinnamon stick, lemongrass, tomatoes, stock, water and chickpeas. Cook for 10mins, 100C, Reverse and spd 1.
5. Add Broccoli and green beens and cook for a further 5 mins, 100C, Reverse and spd 1.
6. Serve curry into bowls and top with pepita seeds.

Next time I would reduce the coconut oil but other than that a delicious fragrant curry.
A nice fragrant
A nice fragrant curry.
Added 2 tsp garam masala and 1 tsp curry powder to enhance flavour. Also used 300g water instead of 500g. Consistency turned out perfect.
Threw away lemongrass and cinnamon stick at the end, wasn't sure what to do with them.
