Vegetarian Clone of Morocan Shepherds pie with sweet potato mash

Ingredients

4 portion(s)

pie

  • 1 can lentils
  • 1/2 level tbsp olive oil
  • 1 red onion
  • 2 cloves Garlic.
  • 1 tablespoons fresh ginger
  • 1/2 teaspoons salt
  • 1 teaspoons Cumin Powder
  • 1 teaspoons cinnamon
  • 1 teaspoons chili powder
  • 1/2 teaspoons honey (optional)
  • 100 grams currants or sultanas
  • 1/4 bunch corriander leaves
  • 1 tablespoons stock paste (EDC)
  • 1 can diced tomatoes (drained)

Mash

  • 500 grams water
  • 500 grams sweet potato
  • 1 teaspoons Cumin Powder
  • 1 tablespoons Milk
  • 1 tablespoon Butter

Recipe's preparation

    Mash
  1. 1. Add 500g water to bowl

    2. Place sweet potato in Varoma & cook 20min/varoma/sp1, may need extra time depending on size of potato. while cooking Pre-heat oven 180 deg/ 170 fan forced

    3. Once cooked, remove water from bowl, insert Butterfly

    4. Add all other ingredients 

    5. Mash 30-40sec/sp3. depending on texture desired.

    6 Place Mash on top of Mince, put in  oven for 15 mins , if crispy top is preferred you can put under grill to finish off.

    7. Sprinkle with extra corriander and roasted cumin seeds if desired.

  3. 1. Place Onion & Garlic into bowl, chop 5sec/ speed 5/mc 2. Scrape down sides, add oil, saute 3mins/100/sp1/mc 3. Add spices & mix 30 sec/sp1/mc 4. Add remaining ingredients, insert Butterfly cook 7 min-varoma-reverse-sp1

    place into thermoserve while creating mash

Tip

you can omit chilli if not a fan.
