  • 300 g dry fusilli or trivelle pasta
  • 40 g Parmesan cheese
  • 1 tablespoon cornflour
  • 1/2 Zucchini chopped into chunks, (optional)
  • 550 g cold water
  • 200 g cream
  • 1 tablespoon vegetable stock paste TM
  • 100 g Milk
  • 1 tablespoon fresh chives, finely chopped

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Ingredient prep
  1. Weigh the pasta into the simmering basket and rinse with cold water to pre wet all the pasta. Set aside.

  2. Put the cheese and cornflour into the TM bowl and grate 6 seconds speed 8. Transfer to a small bowl and set aside. Do not clean bowl.

  3. Put the zucchini in the TM bowl and finely chop 2 seconds speed 5. Put the chopped zucchini on top of the pasta in the simmering basket. Do not clean bowl.

  4. Cooking the pasta
  5. Put the water, cream and vegetable stock into the TM bowl. Insert the simmering basket containing the pasta and zuchinni.

    Cook for 10 minutes Varoma speed 4, MC on.

    Stir the pasta to ensure it is all evenly cooked.

    Cook for further 5 minutes Varoma speed 4, MC on.

    Again, stir the pasta to ensure it is all evenly cooked.

    Cook for  5 more minutes Varoma speed 4, MC on.

  6. While pasta is cooking prewarm the thermoserver with boiling water, and chop the chives.

  7. Once tha pasta is cooked, lift the simmering basket out of the TM bowl using your spatula and transfer the pasta and zucchini into a prewarmed thermoserver bowl and cover with the lid.

  8. Add the reserved cheese and milk to the remaining liquid in the TM bowl and cook for 2 minutes 100 degrees speed 4, MC on.

    Pour the sauce over the pasta in the thermoserver, add the chives and stir through. Leave to rest for 5 minutes before serving.

Tip

The MC is on for all the steps.

The total cooking time for the pasta is 20 minutes.  I have broken it down into steps to make it easy to remember to stir the pasta.

You can speed up the cooking time by submerging the pasta in boiling water in a thermoserver instead of rinsing it in the first step.  Leave it submerged whilst preparing the cheese and zucchini.  Then use boiling water in step 4.  It should then only need 10 minutes to cook, but then omit the milk in the final step or the sauce will be too runny.

Increase the amount of cheese if your like a very strong flavour, the flavour is mild.

It could be made gluten free with the appropiate pasta, you may need to ajust cooking times.

I adapted this recipe from ThermOMG website to simplify it and work in the TM5. I use UHT thickened cream, 200ml packets which we keep as a staple in the pantry.

    Smile Great, easy weekday recipe. Kids loved it - I did peel the zucchini first so that they had no idea it was in there. I did as other members mentioned by cooking chicken above it in the varoma. I also added some garlic and onion powder which took it to another level. Thank you for a great recipe.

    I just love this recipe I added chicken in the top tray of the varoma for the whole time of the cooking. This time I fried up some bacon and onion in the fry pan while it was cooking and added it at the end to the thermoserver was absolutely sensational. I haven't used any packets or jars since finding this recipe it works perfectly every time and the whole family loves it!

    I put the pasta in boiling water while I did the cheese and zucchini. Used 60g of romano cheese. Next time would add some garlic and bacon. Really the options are endless

    Deilish!.... I added a shake of garlic flakes as someone suggested above, and I didn't cook as long as I didn't want my elbow mac, do go soggie. I also used hot water in thermoserver first with pasta while I did zuchuni. so stared with hot water. so that could be why didn't take too long to cook.

    I would def add more garlic granules next time, and some salt and peper, in the cook thru, def will add a little more cheese too. but so easy and so much better than that packet! thank you for a great recipe

    Full of flavour and so simple and quick.
    I did not have fresh chives and used dry chives and still was delicious.

    I added ingredients and cooked sauce desperate with zucchini. I cooked pasta separate and combined all elements once ready to a separate dish.

    I added shredded roast chicken as well and it was soooooo tasty.

    I wish I hadn't of tried this recipe tmrc_emoticons.| My son is a huge fan of the packet mix. I cooked this tonight and added chicken and bacon and now he wants to learn to use my Thermie.  This could be disastrous! All 4 of my kids (husband included) went back for seconds.....and that never happens! Thank you.

    Alfredo pasta - We love this dish in our house! It's particularly good with the Perorino Romano cheese that I get from my local continental grocer. It's so simple and so tasty, and I love that it's all done in one bowl. I don't put the chopped zucchini in with the pasta to cook, I put it in a Thermoserver then add the cooked pasta and sauce and stir through as I find the heat of the pasta and sauce is enough to 'cook' the zucchini. It serves three in our household (we love our pasta!). Five stars! Thanks for sharing!

    I made some minor edits to the recipe today.  I moved the addition of the cornflour to step 1, so that it is mixed in with the cheese when you grate it.  This is because I often found that the cornflour would not mix in completely if it landed in the middle of the blades.  Mixing it in the the cheese means that there are never any lumps and that is how I have been cooking it for some time now.  Also, sometimes I don't have 30 minutes to make it and I have a faster method that uses boiling water from a kettle to start the pasta cooking while I am using the thermomix to prepare the cheese and zuchinni.  After weighing the pasta into the basket I put the basket in a thermoserver and cover with boiling water.  I remove the basket and hot pasta using the hook on the TM spatular, add the chopped zuchinni and place in the TM jug.  Then I use 550g of the hot water remaining in the thermoserver.  It then only needs 10 minutes to cook, stirring once, and the thermoserver is already preheating.  However, due to the reduced cooking time less water boils off, therefore dont add the milk or the sauce will be too thin.  I am glad that your families are enjoying the recipe.  My husband always likes a little cheddar added in with the parmesan, and he and my two boys only just found out there was zuchinni in it ! They have been eating it for a year!

    senspry processing disorder with eating.... I just cooked this meal and added some chicken strips to the Veroma basket.... She not only ate it all but went for seconds..... very rare for

    her to eat all Her first serve....
