Chicken & Bacon Risotto
- 1 white onion, peeled and halved
- 4 clove garlic, peeled
- 30 grams olive oil
- 150 grams bacon, diced
- 250 grams chicken breast, diced
- 350 grams arborio rice
- 2 level tablespoons Vegetable stock paste
- 900 grams water, warm
- 100 grams dry white wine
- 65 grams Parmesan cheese, grated

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Place onion and garlic into bowl.
- Chop; 3 seconds, speed 5.
- Scrap down sides of bowl.
- Add olive oil and bacon to the bowl.
- Sautee; 4 minutes, 100°, "Counter-clockwise operation" reverse, speed 0.5.
- Add chicken to the bowl.
- Sautee; 4 minutes, 100°C, "Counter-clockwise operation" reverse, speed 0.5.
- Add arborio rice, vegetable stock paste, water, dry white wine and grated parmesan cheese to the bowl.
- Cook; 16 minutes, 100°C, "Counter-clockwise operation" reverse, speed 1.5.
- Poor into ThermoServer or serving bowl and rest for 5 minutes.
- Serve and enjoy!
