- 50 grams Parmesan cheese, cubed
- 40 grams Butter
- 40 grams olive oil
- 320 grams arborio rice
- 60 grams white wine
- 1 tablespoon vegetable stock paste (see basic cookbook)

- 2 handfulls of diced ham
- 1 sweet potato, cubed
- 1 bunch sweet potato leaves

Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation
1. Grate parmesan 10 sec/speed 10
2. Melt butter with olive oil 1 min/120 degrees/speed 1
3. Insert butterfly whisk. Add rice and mix 1 min/120 degrees/
/ speed 1.5. No MC.
4. Add wine 2 min/100 degrees/
/speed 1.5. No MC
5. Add stock, chicken, ham, sweet potato and water and cook 13-15 minutes/100 degrees/
/speed 1.5. Place simmering basket on top. In last minute or two of cooking add sweet potato leaves to basked to steam.
6. Risotto should be a little gluggy. Place in thermoserver to rest for five minutes.
7. Stir through sweet potato leaves and parmesan.

baby spinach can be substituted for sweet potato leaves.
