Chicken, Leek, pumpkin and broccoli Risotto

Risotto

  • 400 grams pumpkin, cubed
  • 1 bunch Leeks roughly chopped
  • 2 cloves garlic
  • 40 grams Butter
  • 20 grams Olive Oil.
  • 350 grams Arborio rice.
  • 900 grams chicken stock
  • 60 grams white wine, (optional)
  • 500 grams Chicken Breast Cubed
  • 60 grams thickened cream

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Risotto
  1. 1. Preheat oven to 200 degrees. Place Pumpkin into baking dish with a little of the olive oil and bake until tender. Set aside. Preheat Thermoserver with hot water, place lid on and set aside.

    2. Add garlic and leeks to TM bowl and chop 5 seconds/speed 5. Scrape down sides of bowl.

    3. Add butter and remaining oil and saute for 2 mins/120deg/Counter-clockwise operation/speed 1.

    4. Insert butterfly. Add the Arborio Rice and 60g chicken stock (or white wine can be substituted here). Saute 2 mins/100 degrees/Counter-clockwise operation/speed 1.

    5. Add remaining chicken stock OR (1 tbsp EDC chicken or veg stock & 900 grams of water) and cubed chicken breast. Replace MC with simmer basket.

    6. Cook 10 mins/100degrees/Counter-clockwise operation/Gentle stir setting.

    7. Add broccoli florets to risotto mixture and cook a further 8mins/100degrees/Counter-clockwise operation/Gentle stir setting.

    8. Add the thickened cream. Mix 5 seconds/Counter-clockwise operation/speed 2.

    9. Empty water out of thermoserver.

    10. Add mixture to preheated Thermoserver (can add baby spinach leaves to bottom of server at this point).

    11. Place baked pumpkin on top of risotto mixture. Place lid on top and leave stand for 10-15 minutes before serving.

Tip

I had some basil pesto that I made earlier and added a tablespoon to the top of the risotto. This adds a lovely flavour once stirred in.

Any vegetable can be added to this recipe as can some grated parmesan.

    Had this for dinner tonight and it was deliciously tasty and creamy. Halved the amounts as it was just for the two of us and it worked fine. Thanks for a great recipe  tmrc_emoticons.)
