Made this for tea tonight and hubby said it was the nicest risotto he'd ever had. Only changes were using leftover roast chicken which we added to Thermo server at end. Used baby spinach instead of rocket too. Didn't use wine as we didn't have any. Thanks for sharing, a great recipe!

This is now on weekly rotation in our house. Thank you for sharing. Fantastic for long, cold days at work. When you come home late and get tempted to buy junk food home deliveries. Now I just make your risotto and then we can have the left overs for lunch - it is perfect!

This recipe is easy to follow
This recipe is easy to follow and the dish is restaurant quality! I loved the texture and flavour of the rocket lettuce. My kids loved it too! I added pinenuts.

Made this tonight and it will
Made this tonight and it will certainly be a favourite. I was confused when the method mentioned to add Thyme but it wasn't listed in the ingredients. Thanks for sharing

I was hoping to love this
I was hoping to love this very much but it was just OK for me. I would recommend using baby spinach rather than rocket to avoid the spindly stalk appearance once wilted, and I would not include the carrot next time. My rice went quite orange and I was expecting a little less colour? Not sure where I went wrong. I also had the question about the Thyme. I shopped for the ingredients listed and as it is not listed I did not have it to use so threw in some dried thyme leaves instead.
This was my first time using this recipe and I will use it again as a recipe base, and try to tweak it for our particular taste. I would like to try with the inclusion of the sundried tomatoes. Lots of potential variations for us - Thank you!

Really enjoyed this recipe as
Really enjoyed this recipe as it was our first dinner in it. Just aquestion regarding thyme, you mention this in the method section but its not in the ingredient section, not sure how much to put in it. But still very yummy. Thanks
I loved this... great recipe!
I loved this... great recipe! Thanks for sharing. I will definitely make this a family staple in our regime. I used sweet potato instead of pumpkin and it was delicious!
Delicious. I will need to
Delicious. I will need to chop chicken into smaller cubes next time as the Butterfly came off a few times. I roasted pumpkin separately so I could separate it out for the fussy one in our family.
This was yummy, however I cut
This was yummy, however I cut my pumpkin into small cubes instead of finely chopping it so it wasn't cooked as much as I would have liked. I didn't have thyme or spring onions and used basil and garlic chives instead. Will definitely make this again. Thanks for the recipe!
This was delicious, I added
This was delicious, I added extra pumpkin to replace the carrot and the sundried tomatoe through it gives it an amazing smokey taste. Thanks for sharing.
This is delicious and super
This is delicious and super easy to do. Did over flow a little in to the lid, but could have been because I put a little bit more chicken in than what was suggested.
