Chorizo tomato, basil and capsicum risotto

  • 1 onion, Halved
  • 2 cloves garlic, Peeled
  • 3 Chorzio, Halved and sliced
  • 20 leaves basil leaf, Handful approx 20 leaves
  • 125 grams white wine
  • 1 --- Capsicum, red, Small, sliced
  • 500 grams water
  • 2 tbsp EDC Veg stock paste
  • 300 grams Aborio Rice
  • 75 grams Parmesan cheese, Grated

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. add the onion to bowl and chop for 5 seconds on speed 5. 

    2. Add garlic, capsicum, tomatoes and basil. Chop for 3 seconds on speed 5.

    3. Sauté for 5 minutes on Varoma speed 1.

    4. Add chirizo and cook for 2 minutes 100 degrees speed 1 Counter-clockwise operation

    5. Add wine, water, stock paste and rice 

    6. Cook for 17 minutes, 100 degrees speed 1 Counter-clockwise operation

    7. Placein thermoserver and stir through the parmasen cheese. Let sit for 5 minutes.

    This is by far our favourite risotto! I just have to keep remembering to get diced tomatoes!! More often than not, I leave out the chorizos as it's a bit spicy for my daughter, and it is still AMAZING!

    Our family's new favourite Risotto! Very tasty and no butter or oil! I used fresh tomatoes (450grams) from our garden, only had two chorizo sausages so I added some sliced mushrooms with the liquid.

    ok is it just me, but should the chorizo be cooked before adding to the recipe? No way would the chorizo I bought be able to be chopped as described while raw, they just squished.

    Just as mentioned in an earlier post we too only had 2 chorizo sausages in the fridge so we replaced it with mushrooms and zucchini - added along with the liquids. Husband and toddler loved it! thank you for sharing.

    Delicious! The smoky flavour of the chorizo really comes through the whole risotto and also boosts the tomato and capsicum. Aldi only sells chorizo in packs of 2, so omitted the third chorizo and added some asparagus and mushrooms at the same time as Liquids. Great flavour and works well as a side dish or main.

    This is a really delicious risotto recipe that I will make again and again. Definitely best eaten fresh - the leftovers were more tomato-ey and it doesn't keep that delicious fresh basil flavour (still yum, but not the amazing flavour that it has fresh!).

    I originally did more water than the recipie but it was way to wet so reduced the quantity, when I make it again I will adjust the water level

    This risotto is delicious, as we are vegetarians I decided to squash a couple of Linda McCartney sausages instead of the chorizo, gave them a quick fry until browned and put them aside until the risotto was cooked. I added the sausages just before serving and it great! Thanks for this recipe, it's just that little bit different.

    Really enjoyed this risotto, currently my favorite risotto recipe! Put in a bit of extra wine so it wasn't dry - also added gots cheese instead of parmasen to make it dairy free. Didn't add capsicum and didn't miss it.
