Creamy Zucchini & Bacon Pasta

  • 40 grams Parmesan cheese, fresh, cubed
  • 400 grams Angel Hair Pasta
  • 250 grams broccoli florets
  • 2 cloves garlic, peeled
  • 1 onion, peeled, halved
  • 3 Zucchinis
  • 250 grams thickened cream
  • 200 grams Baby Spinach Leaves
  • cracked pepper, to season
  • 250 grams short cut bacon, thick strips

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Pasta
  1. Cook pasta to packet directions.

    If cooking on stovetop, add broccoli florets in last two minutes of cooking.

    I like to add boiling water & the broccoli to my Thermoserver, add pasta and close lid and leave it. It should be cooked by the time the sauce has cooked. 

    Once cooked, drain and place into Thermoserver or large bowl on top of baby spinach leaves.

     

  2. Creamy Zucchini & Bacon Sauce
  3. Add parmesan cheese to bowl- 10 sec/sp 9 to grate. Set aside

    Trim zuchinni and cut into thirds. Turbo .5 secs. Set aside

    Add onion & garlic- 3 sec/ sp 7

    Add bacon- saute 5 mins/100 deg/Counter-clockwise operation/Gentle stir setting

    Add zucchini- saute 3 mins/100 deg/Counter-clockwise operation/Gentle stir setting

    Add cream- cook 2 mins/100 deg/Counter-clockwise operation/Gentle stir setting

     

    Pour sauce on top of prepared pasta in the Thermoserver, sprinkle parmesan cheese and stir through. Leave to stand for about 5 mins before seasoning to taste and serving.

    This dish is looking and tasting good.....I cooked the pasta in the thermodish but didn't use broccoli as I didn't have any... I had to take some pasta out because I wouldn't be able to fit in the sauce otherwise. I used penne pasta not angle hair. About to eat now and its delicious.

    This was delicious, used spiral pasta, cooked in the thermi , all I had, and leftover leg ham,  spinach and marrows out of the garden. Tore the spinach and covered with boiling water in the basket in the thermo server for a couple of minutes before adding cooked pasta. Hubby who hates pasta had seconds, definitely a favourite

    This was easy to make and yummy. Kids loved it too and they don't normally like creamy pasta sauces.

    This was very yummy!  I boiled the pasta and broccoli together in hot salted water for 2 mins only as angel hair pasta cooks quickly. My main tip would be to cook only 300-320g of pasta for the quantity of sauce. I used a low fat cooking cream too just to lower the fat content with the bacon. Will definitely make again!   tmrc_emoticons.)
