Fettucine Carbonara
- 40 g raw cashews
- 1/2 brown onion
- 1 garlic clove
- 4 pieces bacon, roughly chopped
- 2 chicken thighs, in 1-2cm cubes
- 500 g water
- 1 tablespoon Vegetable stock paste
- 200 g dairy free milk, (e.g. oat, rice, nut)
- 250 g dried fettucine pasta, broken into halves
- 40 g olive oil
- 2 tablespoon savoury yeast flakes

Recipe's preparation
Mill cashews for 10 sec / speed 10. Reserve in a bowl
Place onion, garlic and bacon into mixing bowl. Chop for 3 sec / speed 7
Add oil and saute for 3 min / Varoma / speed 1
Add chicken and saute for 3 min / Varoma / "Counter-clockwise operation" / speed 1
Add stock paste, water, milk and reserved cashews and cook for 10 min / 100C / "Counter-clockwise operation" / speed 1
Add dried fettucine and mix well with spatula to ensure all pasta is completely submerged in the sauce. Cook for 7-10 min / 100C / "Counter-clockwise operation" / speed "Gentle stir setting"
Transfer into Thermoserver. Sprinkle with savoury yeast flakes and allow to rest for 3-5 minutes before serving.

Tip
There are many adaptions you can make to this recipe.
Add 100-200g of your choice of vegetables (mushrooms, zucchini, carrot, brocolli, cauliflower, capsicum) with the onion and garlic and chop/saute.
Replace onion and garlic with chives, green spring onions and parsley/herbs for a low FODMAP version.
Replace fettucine with a firm gluten free fettucine (e.g. San Remo, not a corn based one) for gluten free.
Replace fettucine with another pasta shape if desired.
Remove chicken and bacon for a vegetarian dish (skip the step where you saute the chicken for 3 mins).
If you like a runnier "saucier" dish, add an extra 200g of milk and an extra 10g of cashews.

I didn't put the MC in and was a bit concerned it was going to overflow but turned out amazing. Used soy milk and it was delicious! Got the approval from my DF/GF husband. Thanks for sharing!

I add 2 extra garlic cloves instead of the onion, I also do the gluten free version and frequently add vegies.

My husband hated it, he said
My husband hated it, he said the cashews made the sauce gritty and the pasta needed longer time. Fortunately the kids ate it under protest. It wont be on my must make again list even though my daughter can't have dairy.
My fussy two year old loves
My fussy two year old loves it! I pureed the whole sauce (cause you know...lumps!) and cooked the pasta separately and it's perfect. Used normal milk as this isn't as issue for us, I just wanted to up the nutritional value with cashews instead of cream. Also added zucchini. It's a hit!

I quite enjoyed this. I left the mc off as someone instructed and worked beautifully. Tasted just like packet carbonara .. I also added Parmesan to hubbies at the end so he found it more authentic.
Great recipe! Only I chopped
Great recipe! Only I chopped the bacon myself, then fried it and the chicken seperately.
Tried it the otherway first but I over chopped the bacon and it made it rather gritty.
Edit: Forgot to mention, when cooking for 10 mins without the pasta then with the pasta don't put the measuring cup in. It won't be a soup at the end.

It's way too much water, I followed the receipe and ended up with more like a carbonara noodle soup

Quick and easy. A great standby when time is short as its ingredients you have in the cupboard and can easily mix and match with the vege's.

This was very delicious, but next time I will chop the bacon by hand and not pulverise with the onion and garlic -- I like to "see" the bacon in my carbonara

With mushrooms, bacon, spring onions, carrot, using a spiral pasta instead of fettucine. Leftover roasted veggies (pumpkin, broccoli, zucchini) stirred through into Thermoserver at the end.
