- 1/2 brown onion
- 1 carrot, cut into 3 chunks
- 120 g diced ham or bacon
- 30 g Butter, cubed
- 80 g tasty cheese, cubed
- 30 g Parmesan cheese, cubed
- 1 mc of frozen corn
- 1 mc of frozen peas
- 1 tsp wholegrain mustard
- 2 tsp Dijon mustard
- 50 g plain flour
- 500 g Milk
- Salt & pepper to taste
- 250-350 g pasta - such as macaroni or shells or spirals

Recipe's preparation
1. Quickly boil a small amount of water in the kettle then add about 1 inch to your Thermoserver to pre-warm it, lid on.
2. Fill the kettle right up and set to boil.
3. Add the onion to your TM bowl & chop 2sec/sp7.
4. Add the carrot & chop 2-3 sec/sp5.
5. Add the butter & ham/bacon then saute 4mins/ 100 degrees /sp1.
6. While this is cooking, tip the inch of water out of the Thermoserver, add the dry pasta then fill almost to the top with the freshly boiled water. Give it a stir to separate the pasta before placing the lid on.
7. Add the cubed cheeses, peas & corn, mustards, flour, milk & seasoning to the Thermomix bowl. Cook 10mins/90 degrees/"Counter-clockwise operation" /sp3.
8. Once the sauce has finished cooking, drain & rinse the pasta through a colander (your Varoma base works nicely), then tip pasta back into the Thermoserver. Add the sauce & stir to combine.

As it stands in these
As it stands in these instructions, the sauce was undercooked with a distinct floury taste. Subsequently I have added cornflour instead of plain flour & this worked great. I cooked step 7 on reverse which certainly kept the sauce chunkier.
I used small spirals and they were undercooked as well using this method, however I think if I had have rested the sauce & pasta together in the thermoserve for longer this might have turned out better.
I would try this recipe again but as with one of the comments above I would probably cook the onion/carrot mixture for longer ?5 minutes & step 7 on reverse.

I thought i'd try this for different mac n cheese recipe. It was nice but i think some of the veggies tooks away the cheesy taste, maybe if they were fresh instead of frozen .

Yummy. My 19 year old and I both had seconds. Will add a few more veges next time, and it will be one where I use up the veges in the crisper. Gluten free corn pasta spirals worked beautifully. I also made it fructose friendly by leaving out the onion. To make it low FODMAP - use non dairy or lactose free milk.

Thanks for your feedback. I have made a few changes to the recipe based on the feedback from you and others. Yes, reverse is a good idea if you find that the veges are getting mushed. However, I wouldn't go any slower than sp3 as you will find that sauce sticks on the bottom - painful to clean.
I am surprised that your sauce tasted undercooked, as I based this recipe on the EDC Bechemal sauce, which is cooked in only 7 mins. I have increased the cooking time for the onion at the beginning, though.
Re: the pasta being undercooked. I have actually noticed that some brands work better than others (I wouldn't try wholemeal pasta this way, either!). I found that Vetta didnt work as it needed a lot of rinsing; it was very gluggy. Good old Woolies no-name brand is fine - go figure! Do make sure you cover the pasta in a good inch or 2 of extra boiling water and give it a stir to separate, before putting the lid on.

Just made this again tonight
Just made this again tonight for my kids (actually, reheated left-overs from a few nights ago). I had just made pesto and didn't bother to clean out the bowl, just chucked the cheese sauce into the dirty bowl and reheated it - awesome!! The kids didn't seem to notice the slight green tinge ....

Great quick recipe, however would recommend cooking the onions for longer as the sauce tasted a bit too raw onioney also don't be shy on the seasoning and mustard :o)

This was a hit In our house, even with the fussy toddler.
I added sweet potato into step 3 to make it a 5 veg dish - ticks the right boxes!
step 7 I found speed 4 (even on reverse) turned it into a sloppy sauce rather than chunky as in the picture - as a pleasant upside I think this smuggled the veggies past my toddler, but generally I think speed 1 or 2 reverse would be best for chunky.
I added 4 eggs to my leftovers and baked for 25min on 200 degrees to mmacaroni mini quiches for lunch boxes.
