Garden vegetables tagliatelle
- 500 g ripe tomatoes, cut in two
- 1 garlic clove
- 2 aubergines, peeled and cut in small pieces
- 120 g olive oil
- 220 g white wine
- 30 g Flour, Plain
- 2 tbsp pickled capers
- 200 g Pitted green olives
- 1 tsp dried oregano
- 300 g pasta, tagliatelle
- to taste salt
- 50 g Grated Parmesan Cheese
- to taste pepper, black, ground

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Place tomatoes into mixing bowl and press Turbo button twice. Empty into a bowl and set aside.
- Place garlic into mixing bowl and chop 5 sec/speed 5. Add aubergines and olive oil and cook 8 min/100°C/"Counter-clockwise operation" /speed "Gentle stir setting" . At the 4 minute mark, add wine from the opening of the mixing bowl lid.
- Add tomatoes, flour, capers, olives and oregano and cook 15 min/100°C/"Counter-clockwise operation" /speed "Gentle stir setting" . Empty into a bowl and keep the sauce warm.
- Wash mixing bowl and place inside 1½ hot water, salt and tagliatelle and cook for the time mentioned on package/100°C/speed 1.
- Strain pasta and empty into the sauce. Mix, sprinkle with parmesan and pepper and serve
