Marry Me Chicken Risotto
- 20 g olive oil
- 3 cloves garlic
- 3 boneless skinless chicken thighs
- 2 level tsp Italian Stallion
- 2 level tsp Man Grind
- 40 g sun-dried tomatoes
- .5 red onion
- 150 g arborio rice
- 40 g white wine
- 350 g water
- 1 heaped tsp chicken stock paste
- 60 g cream
- 25 g parmesan

- Place Parmesan in mixing bowl then chop 10 sec/speed 10. Transfer to another bowl and set aside.
- In clean bowl put garlic, onion, sun-dried tomatoes, olive oil → 3 sec / Speed 7. Scrape down.
Saute - 2 min / 120°C / Speed 1 (no MC). - Add sliced chicken, Italian Stallion & Man Grind → 6 min / 120°C / Reverse / Speed 1 (spatula to stir occasionally).
- Add wine followed by rice then cook 2 min/120°C//speed 1. Scrape base of mixing bowl well with spatula to loosen rice.
- Add chicken stock paste, cream and water then cook 12 min/100°C//speed 1.
- Add small knob of butter and reserved grated Parmesan then stir in with spatula. Taste risotto and adjust seasoning if desired, then leave to rest for 2 minutes. Serve immediately.
