Napoli Sauce

  • 2 stalks spring onions, roughly cut
  • 2 cloves garlic
  • 30 grams extra virgin olive oil
  • 2 tablespoons tomato paste
  • 1 bottle tomato passata
  • 1 teaspoon sugar
  • 5-10 leaves basil, fresh
  • 1/2 tablespoon vegetable stock conc
  • 1/4 teaspoon Chilli Paste, optional

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Napoli Sauce
  1. 1. Place spring onion, garlic and extra virgin olive oil into mixing bowl and chop 5 sec/speed 5.

    2. Scrape down sides of mixing bowl with spatula

    3. Saute 7 minutes/120oC/speed 1

    4. Add tomato paste and saute for a further 2 minutes/120oC/speed 1

    5. Add tomato passata, sugar, vegetable stock concentrate, chilli paste (optional) and basil and cook 20 minutes/100oC/speed 2.

    6. Add salt and pepper to taste
