Soya Bean Soup

  • 100 g Dried soy beans, Soaked overnight
  • 25 g sesame seeds, toasted
  • 10 g pine nuts
  • 800 g water
  • 5 g salt, Adjust to your taste
  • 4 eggs, More if you like
  • 1/2 Lebanese cucumber, Julienned
  • 4 baby tomatoes, Sliced in half
  • ice cubes, Optional
  • 250 g So Myeon noodles, Korean wheat noodles (thin & chewy)
  • Black Sesame Seeds, Toasted, for garnishing

Recipe's preparation

    Boiled Egg
  1. Wash and clean 4 eggs, place into TMBowl add water to cover the eggs. Cook using egg boiler mode, select desired firmness of egg. I like medium for this dish. When it's done, immediately remove and place in cold water. This helps to stop the cooking action. In summer I add a few ice cubes to the water as the eggs are hot.

  3. Toast sesame seeds.
    'julienne cucumber.
    slice tomatoes in half
    toast pine nuts (optional)
    eggs de-shelled and sliced in half.
  4. Soya bean soup.
  5. Add soya beans (which has bean soaked overnight) to TMBowl, add 800g water, cook for 15mins / 100C /speed 1.
  6. Add 25g toasted sesame seeds, 10g pine nuts, add salt blend for 2 mins / speed 8 (TM6 use blender mode Blend).

    for cold noodles set aside in the fridge, to serve at a later time. Or you can add ice to the dish as you serve up.
    for hot noodles you can serve straight away.

  8. Add water 1.8L and boil to 100C using kettle mode Kettle

    Add noodles through the MC hole and cook for 4 mins / 100C / Counter-clockwise operation / speed 1.

    As soon as it cooks, immediately drain water and rinse in cold water. While in cold water the noodles are easy to swirl around and grab around your fingers to make a doughnut shape for a more presentable appearance in a bowl. Grab enough for an individual serve and place into a bowl.

    If not just place iindividual serves of noodles in a bowl.

    Pour soup over noodles, garnish with eggs, cucumber, black sesame seeds and toasted pine nuts.

Tip

This is a subtle flavoured Korean noodle dish. This is how it's traditionally served.

for noodles, portion 100g to 150g uncooked per person. More if your are a big eater. Adjust salt levels to your taste.

Soya beans can be soaked overnight and stored in the freezer until needed. So you can have beans ready to cook when you feel like a bowl of kongguksu. Soaked beans should have rehydrated to about 2 1/2 times the original size.
