Non-Fried Fried Rice

  • 1 carrot
  • 1 celery stalk
  • 6 Shitake mushrooms, soaked (or use button mushrooms), optional
  • 75 g frozen corn kernels
  • 75 g frozen peas
  • 20 g sesame oil
  • 1 brown onion, cut into large chunks
  • 2 garlic cloves
  • 100 g Bacon, diced, or use chinese pork from the deli
  • 250 g basmati rice
  • 900 g water
  • 2 eggs, lightly beaten
  • 1/24 tsp salt
  • 1/8 tsp pepper, ground
  • 1/2 tsp sesame oil, extra
  • 1 tbsp kecap manis, or soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp Sweet chilli sauce

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. 1. Add 1 carrot & 2 stick celery, large dice to TM bowl and chop 4 sec/sp 4.5.
    2. Add 6 soaked Shitake mushrooms to bowl and chop for 3 sec/ sp 3.
    3. Place into varoma bowl.
    Don't wash the bowl. (Yay!!)
    4. Weigh 150g peas & corn on top of the veg & mushrooms.
    5. Put the varoma bowl aside.
    6. Place 1 brown onion, cut into large chunks & 2 garlic cloves into TM bowl and chop for 2 sec/sp 6.
    7. Scrape down and add 100g of diced bacon
    8. Add 20g sesame oil and saute for 5 min/100/sp 1.
    9. Add to varoma bowl on top of other veggies.
    Don't wash the bowl. (another Yay!)
    10. Weigh 900g water into TM bowl - generally up to 1L mark.
    11. Insert basket and weigh in 250g basmati rice.
    12. Remove and rinse rice under cold running water until it runs clear.
    13. Replace basket with rice in into bowl. Place lid on without MC and place Varoma basket on top of lid.
    14. Wet & scrunch a piece of baking paper & lay on varoma tray. (Or use the special stainless steel tray available at the Mix Shop)
    15. Add salt and pepper and extra sesame oil to 2 lightly beaten eggs and pour onto paper.
    16. Carefully place Varoma tray on top of Varoma bowl and place Varoma lid on top.
    17. Cook 17 min/100/sp 4.
    18. Chop omelette up with spatula.
    19. Place rice and vegetables into a large dish and add omelette and sauces.
    20. Stir gently to combine and taste for seasoning. Add salt and pepper if necessary.

Tip

My take on Witsy's Non Fried Fried Rice.
Sprinkle with sliced spring onion to serve.
Can add shredded or cubed cooked chicken or raw prawn meat to Varoma tray when adding omelette to cook.
Mushrooms are optional. I couldn't find mine in the cupboard, so went without this time!
