Pasta Salad

  • 0.5 red capsicum, deseeded
  • 0.5 red onion, peeled and cut in half
  • 2 pieces pickle, (optional)
  • 1 tbsp stock paste
  • 1.5 litres water
  • 250 g pasta, dry
  • 80 g corn kernels, frozen
  • 80 g peas, baby, frozen
  • 150 g Grapeseed Oil
  • 1 egg
  • 1 tbsp lemon juice
  • 1 tbsp mustard
  • to taste salt
  • to taste ground pepper
  • 2 tbsp pickle juice
  • 0.5 tsp paprika

Recipe's preparation

  1. Add capsicum, red onion and pickles to bowl and chop 4sec/sp.4.5 and set aside.
  2. Insert Blade cover
  3. Add water and stock and heat Kettle 100°C
  4. Add pasta and cook 2min less than cooking instruction/100°C/Counter-clockwise operation sp1
  5. Add corn and peas and cook 2min/100°C/Counter-clockwise operationsp 1
  6. Drain through Varoma and add to chopped veggies
  7. Clean and dry Bowl
  8. Place bowl on lid and weigh Oil
  9. Add egg, lemon juice and mustard to bowl
  10. Emulsify 1min 30sec/sp4 while pouring oil slowly onto lid
  11. Add pickle juice, paprika, salt & pepper and combine 10sec/sp2.5
  12. Pour over pasta and stir to combine

Tip

-Instead of making your own mayo you can skip from step 7 to 11 by adding 150g of mayo
-You can also add 50g of yoghurt to make it a little lighter
