Sausage Risotto

Ingredients

4 portion(s)

  • 500 g small pre-cooked sausages, Sliced
  • 300 g white wine
  • 1 carrot, Chopped
  • 300 g arborio rice
  • 400 g tomato passata, or tinned chopped tomatoes
  • 1 tbsp vegetable stock concentrate
  • 100 g water
  • 100 g grated cheese, Optional (Parmesan works well)

Recipe's preparation

  1. Chop carrot at speed 8 for 7 secs.

  2. Add all remaining ingredients and Cook for 17 mins at 100 degrees on soft .

  3. place remainder of ingredients in bowl and cook for 17 mins on slow speed at 100 degrees.

  4. Rest in serving for 10 minutes before serving. Stir though cheese if desired.

  5. I do not season as this meal is primarily for my kids and I rely on the seasoning of the sausages, definitely worth experimenting with different types of sausages.

    Definitely halve the wine and replace with water! I cooked for about 25 minutes. I used garlic & rosemary sausages and it's a hit with my whole family 👍

    Worked great for us. I added a cube of frozen chopped spinach and used 150g wine and 150g chicken bone broth. Cooked for about 20min.

  • I cooked 2x 17 mins for 100

    I cooked 2x 17 mins for 100 degrees etc. (as per step 2 and 3 instruction)  the rice was still a little bit crunchy which I did not like. I think there was way to much wine in this recipe. I could smell and taste the wine in the finished product. I had hoped that this sausage based dish would be a hit with the kids but it wasn't.

    Yum tmrc_emoticons.) I added an onion and sauted it in 15ml oil for 1 1/2 min and mixed in a blend of Parmesan and cheddar cheese at the end tmrc_emoticons.)
