Variation Spaghetti Alla Puttanesca

Ingredients

Sauce

  • 1 brown onion, peeled and quartered
  • 4 cloves garlic, Peeled
  • 2 tablespoons olive oil
  • 4 sprigs fresh basil
  • 1 can canned diced tomatoes
  • 60 grams sun-dried tomatoes
  • 50 grams fresh brown mushrooms
  • 1 Capsicum, roughly chopped
  • 50 grams zucchini, roughly chopped
  • 1 pinch Dried chilli
  • tomato paste, small can (120g)
  • 1 tablespoon chicken stock paste, or more to taste (80-100g)
  • 700 grams water
  • 400 grams spaghetti, snapped in half
  • 100 grams Pitted black olives, sliced
  • Parmesan cheese, shaved

Recipe's preparation

  1. Chop onion and garlic on speed 5 for 4 seconds

    Add Olive oil and saute for 3 minutes on 120 degrees, speed 1

    Add capsicum, zucchini, mushrooms, basil and sun-dried tomatoes - 10 sec, Speed 6. Scrape bowl.

    Add Water, tomatoes, tomato paste, stock and seasoning.
    Cook 12 minutes, 100deg Speed 2

    Add spaghetti and cook 10 minutes, 100 deg, reverse, speed 1

    Stir the olives and parmesan through and serve.

    Garnish with extra fresh basil.
