  • 80g cubes parmesan
  • 2 zucchini chopped roughly
  • 1 brown onion, approx 80 g
  • 150g bacon roughly chopped
  • 3 eggs
  • 150ml cream
  • 375 g spaghetti pasta

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    zucchini carbonara
  1. 1. Grate parmesan for 10sec/sp 10. Transfer to a bowl and set aside. Clean and dry mixing bowl.

  2. 2.Place zucchini into bowl and grate 3 sec/sp 5. Set aside.

  3. 3. Place onion and bacon in the TM bowl and chop 3 sec/sp5. Add oil and saute for 2 min/120degrees/sp1. 

  4. 4. Add zucchini, saute 1 min/120 degrees/sp1. Set aside in thermoserver.

  5. 5. Cook pasta as per packet instructions, reserving one cup cooking liquid.

  6. 6. Add eggs, cream and half of the parmesan to the bowl and mix 15 sec/sp4. 

  7. 7. While pasta is hot add it to the bacon mixture. Add the egg mixture and stir it all though. You can add some of the pasta liquid to dilute the cream if desired. 

  8. 8. Serve with remaining parmesan

    Sorry, but this was terrible. I didn’t realise til the end of the recipe that we would end up with uncooked eggs (I’m pregnant, so then had to microwave my bowl of pasta and basically ended up with scrambled eggs for dinner instead) and cold cream. The recipe relies on the heat of the pasta to cook through, the cream and egg mix but it doesn’t even make it warm. A totally wasteful mess in our house. Never again.

    Kids loved it but I puréed the zucchini after so it was hidden as I have fussy eaters. Lovely but either more bacon or Parmesan to add a touch more flavour. But hit with the kids will do it again

    Great recipe and enjoyed by Miss 6 and Mr 8.  Even had Gran and Daddy backing up for 2nds.   Suggest the ingredients be listed in the order in which they are used.   Will be making again for sure
