Double choc apricot muffins

Muffin batter

  • 300 grams plain flour
  • 2 eggs
  • 125 grams dried apricots, Diced
  • 180 grams chocolate chips
  • 300 grams full cream milk
  • 3 heaped tablespoons cocoa powder, 70% cocoa
  • 2 heaped teaspoons baking powder
  • 1 pinch salt
  • 170 grams Butter, Softened and cubed
  • 50 grams raw sugar
  • 80 grams Maple syrup

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180 degrees celsius (fan-forced oven)
    Grease muffin tray
    Place all ingredients except for chocolate chips and apricots into the bowl, MC on, and mix on speed 4 for 30 seconds
    Scrape down sides of bowl, and add in chocolate chips and apricots. Mix on Reverse, speed 4 for 15 seconds
    Pour mixture into greased muffin tray and bake for 20 minutes or until an inserted skewer comes out clean.

    Let cool for a few minutes and serve warm with butter.

    These will keep for a few days in an airtight container, or keep in freezer and reheat as needed.

Adjust the sweetness of these muffins by adding more or less sugar and maple syrup.
