If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Separate lemn zest and flesh (no white pith) set aside
Add Lemon zest to bowl grate 10 sec sp9 . scrape down and repeat
Add sugar, vanilla bean paste, mixed berries, lemon flesh
Place simmering basket on lid to reduce splatter
Cook 25 mins Varoma temp, speed 2
Note:
Check how well jam is set by placing 1 tsp of jam on a cold plate - if set will form gel quickly
For smoother jam, place MC on, and slowly increase the speed to 4 for 5 seconds or as long as needed.

Tip
If you add the sugar last, you shouldn't get problems with the jam catching on the bottom of the bowl.
