Patricia's Almond Biscuits

  • 200 grams almonds
  • 150 grams Butter or Margarine, cubed
  • 50 grams Soft brown sugar
  • 100 grams sugar
  • 1 egg
  • 5 grams vanilla essence, (1 teaspoon)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    This is my mother's recipe, translated into a TM recipe now.
  1. Preheat oven to 180 degrees. Line two baking trays with baking paper or grease and flour.

    Place almonds in TM bowl and chop 4 seconds speed 7. Reduce time or speed if you would like a chunkier biscuit. Set aside.

    Weigh the 100g of sugar into the TM and mill 3 seconds speed10. Add butter, brown sugar and egg and mix 10 seconds on speed 8. Mixture should be creamy.
    Add flour and almonds and Dough mode30 seconds, scrape down sides and Dough mode20 seconds or until well combined.
  2. Using wet hands, roll spoonfuls of dough into a ball. Place on baking tray and flatten slightly.
    Cook for 15 mins or until golden brown.

    Cool biscuits on a tray and keep in an airtight container.

Tip

My mother always preferred margarine to butter to give it a creamy texture.
Alternatives:
Exchange almonds for 1 cup dessicated cococut, walnuts or pecans, rice flour, chocolate chips or any dry fruit.
