AJVAR - Roast Capsicum Relish

Ingredients

  • 5-6 Large Red Capsicums (roasted, peeled & deseeded)
  • 3 cloves garlic, peeled
  • 200 grams Evoo
  • Salt to suit taste

Recipe's preparation

  1. Add garlic to TM bowl and chop speed 6 for 5 seconds.

  2. Add roasted capsicums and pulse on turbo 2-3 times to achieve a chunky texture.  Do not over chop as they will break down during the cooking process.

  3. Add EVOO and salt.

    Cook for 1hr, temp 100, Reverse speed soft.

  4. ENJOY on fresh crusty bread accompanied by some feta cheese!! YUMMM

This is a very traditional European (Macedonian) recipe and is extremely popular.  Ideally it is best made mid to end of summer when capsicums/peppers are less expensive.  This recipe will give you approx 900g of AJVAR (pronounced ai-var) and can be made in larger quantities.

    I used 5 capsicums. I don't think I added enough salt as mine is a bit bland and runny. A bit like thin sauce. Not sure what I did wrong? 🤔

    EVOO stands for extra Virgin olive oil. You could just use normal olive oil, it will still work fine

    Oh thanks so much for posting this, I have been buying this amzing sauce for quite some months when i stumbled accross it in the International section of the supermarket. I have been going to google and see if i could convert a recipe for the Thermomx, now I dont have to tmrc_emoticons.) I absolutely love it. I use it in any Tomato based sauces for extra flavour  and in slow cooked meat dishes it is divine. Will get on to it as soon as the price of capsicums come down or i find some out cheap. I noticed they were $12 a kilo at the moment. tmrc_emoticons.( tmrc_emoticons.(
