Ingredients

Beetroot Hummus

  • 40 grams tahini
  • 1 garlic clove, large or 2 small
  • 400 grams Chickpeas, drained & Rinsed (one tin), or soak & cook your own
  • 1 Lemon Juiced
  • 1/2 large fresh beetroot peeled, cut in half
  • 1 teaspoon cumin, ground
  • 1 teaspoon coriander ground
  • 1/2 teaspoon chipotle, ground, add less if you prefer or smoked paprika
  • 20 grams EVOO (extra virgin olive oil)
  • salt & peper, to taste

Recipe's preparation

    Beetroot Hummus
  1. Place garlic into TM bowl & process 2 secs on speed 7.

    Add all remaining hummus ingredients & chop for 5 -10 secs on Speed 5 or until desired consistency is reached.

    Sprinkle with extra paprika & a drizzle of olive oil to serve.

Tip

You can make your own Tahini using sesame seeds & a little sesame oil as per vegetarian cookbook recipe.

Mill your own spices to make it even tastier.

For a smoother dip add a couple of ice cubes with all the remaining ingredients.

    Mine was not as smooth as the one in the picture looks, adding ice cubes as suggested didn't make much difference. It still tasted great though, was just a little thick/chunky

    Made this with some variations, I love beetroot dip and normally just do it with other white beans.I halved the spices and still felt it was too spicy.  3 tbs of lemon juice1 large beetroot roasted in oven - cover in foil and add 1 tablespoon of water to it.  This steams it and keeps it moist.The beetroot is the hero of the dish, so the more you use of it the better imo.
