      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place Olive Oil in a tall glass and place in the freezer for 30mins.

  2. Place balsamic vinegar and agar agar powder in TM Bowl and mix for 3 min/80deg/Speed 1. Remove the olive oil from the freezer.

  3. While the mixture is still hot pour into a plastic syringe and slowly drip the mixture into the olive oil. Drip from a height of about 5cm and with the syringe vertical to ensure round pearls.

  4. The pearls will sink to the bottom. To recover them pour olive oil through a sieve gently.

Tip

These are impressive served on top of a salad or even served on top of strawberries.

If the mixture cools down it will thicken so ensure the temperature stays around 70-80 degress.

You can use any size syringe you like. The bigger the syringe the larger the pearls. I usually use a 10mL syringe from the chemist.
