Beetroot and horseradish relish

Ingredients

390 g

  • 1000 g water
  • 500 g Beetroot, unpeeled
  • 40 g fresh horseradish, peeled and cut into pieces
  • tsp sugar
  • 3 tbsp lemon juice
  • tsp salt

Recipe's preparation

  1. Place water into mixing bowl and place whole beetroots into Varoma dish. Place Varoma into position and cook 40-60 min/Varoma/speed 2, until beetroots are soft. Set beetroot aside and allow to cool completely (approx. 40 minutes). Once cool enough to handle, peel beetroot, cut into pieces (3-4 cm) and set aside. Rinse and dry mixing bowl.

  2. Place horseradish into mixing bowl and chop 5 sec/speed 8. Scrape down sides of mixing bowl with spatula.

  3. Add remaining ingredients, including reserved beetroot, and mix 30 sec/speed 6, until a smooth consistency is achieved.

Tip

· Fresh horseradish can be found during autumn, winter and early spring at green grocers, farmers' markets and specialty food stores. You can also use jarred pure horseradish (available from selected delis).

· Serve with hot or cold roasted meats, smoked salmon, hard boiled eggs or roasted root vegetables. · Relish can be stored in the refrigerator for several weeks. · Adjust the amount of fresh horseradish to your liking. · When handling beetroot, we suggest wearing disposable gloves as beetroot can stain.

    All recipes using fresh horseradish should come with a warning along the lines of the following.

    The characteristic bite from horseradish is sharpest when the oils in the root are first exposed to air. So potent are these oils that the roots should be prepared in a well ventilated area, preferably outdoors, and using protective eye wear and gloves and do everything you can to avoid touching your eyes after handling. I made pickled horseradish with my neighbour earlier in the week, I grew the plants and she cleaned the roots and then bottled the results after grating in the Thermomix. She didn't use those precautions and ended up looking like she had the flu, the fumes had had such an effect on her nasal mucosa and eyes.

    Hi Joanne, a good local green grocer or farmers market should stock it during winter however it could depend on where you live.
