Ingredients

Dip

  • 1 can baby beetroot
  • 50 grams Parmesean cubed
  • 70 grams cashews (raw or toasted)
  • 1 heaped teaspoon horseradish cream

Recipe's preparation

    Beetroot Dip
  1. Put all ingredients into bowl and blend for 1 min, speed 7. Scrape down sides of the bowl and blend again for 30 sec, speed 7.


    serve with crackers, vege sticks, also great spread on sandwiches.

    I love this dip!!! I made it for a trio of dips for Fathers day, my Father loves hummus, but I think this is now his favourite (Which he'll have to fight Mum for it!)

    I used a can of sliced Beetroot. I drained it but saved some of the liquid to use later. I didn't add horseradish or mustard and it still turned out fine.

    Made this today but had no tinned beetroot so I used 1 whole beetroot and substituted the horseradish with wasabi and a small amount of mayonnaise. Turned out pretty amazing.

    I ended up using a 450g tin of baby beetroot (drained) and that worked perfectly. I served this at a house party with another thermie-made dip but this one was definitely the favourite!
