Relish
- 400 g raw beetroot, rinsed & scrubbed, roughly chopped
- 180 g green apple, cored & quartered, 1 large
- 1/2 red onion
- 120 g white wine vinegar
- 120 g balsamic vinegar
- 120 g brown sugar
- 1/2 lemon, juiced (no pips)
- 1/2 teaspoon Dijon mustard
- 20 g oil
- 1 teaspoon cinnamon
- 1 teaspoon Nutmeg
Recipe's preparation
Place beetroot, apple, and onion into the mixing bowl and chop 7sec / SP 4. Scrape down sides of the bowl.
Add remaining ingredients and cook 30 mins / Varoma / "Counter-clockwise operation" / "Gentle stir setting" with MC off and TM basket on the mixing bowl lid
Allow to cool slightly, place into sterilised jars and store in the refrigerator.

Soooooooo good. What an amazing way to use up some beets that had gone soft in the veg drawer! Used red wine vinegar instead of white, and a shallot, as they were all I had. Like others said, just copped the beet onion and apple a little longer than the recipe said. Makes a lot of chutney, but awesome with bickies and cheese!

Thanks for the recipe. As others have mentioned you definitely need to chop the Beetroot, Apple and red onion for longer and on a higher speed 5-6. I reduced the sugar to 90g and it's still sweet enough (could even reduce again). I have made this a few times now and every time we have guests they love it!

I've just made mine and it smells and tastes very 'vinegary'. It's still warm at the moment. I'm wondering if this will settle as it cools? I cannot add anymore sugar as it's very sweet already. Thank you

This was really good. I only put in half the amount of brown sugar and it was still sweet enough for me.
I halved the brown sugar
I halved the brown sugar quantity and could probably reduce this a little more and cook it a couple of minutes less. I left out the cinnamon. Delish and handy to use up fresh beetroot when you have an over supply. Goes beautifully with goats cheese - I used goats cheese and this relish as a pizza topper.
