Ingredients

Bruschetta spread

  • 2 level tbsp Basil Pesto, Either bought or homemade - includes parm cheese, garlic, basil, olive oil, salt
  • 2 piece ripe tomatoes, Could use cherry tomatoes also
  • 1 pieces red onion
  • 1 to taste salt, fine
  • 1 to taste Balsamic Glaze, If no glaze, use Vinegar
  • 20 small pieces bread, Fresh or toasted. French loaf or sour dough are good.

Recipe's preparation

    Preparing ingredients
  1. 1. Peel red onion and chop into four
    2. Chop tomatoes into four
    3. Cut bread pieces (and optionally toast) and put on serving plate
  2. Thermomixing in bowl
  3. 1. Place pesto, onion and tomatoes into mixing bowl and chop/mix for 20 seconds and Counter-clockwise operation"Counter-clockwise operation" on speed 4.

    2. Scrape down sides of mixing bowl with scrapper. Add salt to taste - depending on saltiness of pesto, you may not need it

    3. Repeat chop/mix for further time and/or increased speed to ensure tomato and onion is at least finely chopped.
  4. Serving up
  5. Place bowl of bruschetta (with a spoon) on serving plate with already prepared pieces of bread and a little dipping bowl of balsamic glaze. Alternatively spread bruschetta onto prepared bread slices (with option also of spreadin smooth ricotta first) and drizzle balsamic glaze over pieces.

Tip

You can premake spread and toast bread and place in container to serve later/ next day. Advantage of spread over normal bruschetta is it is not falling off the bread.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
