- 1 large onion quartered, (or 2 small onions - mine weighed 175g)
- 80 grams Butter
- 180 grams double thickened cream
- 60 grams good quality Blue Cheese, crumbled or diced

TM 5Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
Chop onion 5 sec / speed 7. Scrape the sides of the bowl.
Add butter and caramalise onion 10 mins / 120oC / / speed 2 – MC OFF (For a TM31 – set temperature to Varoma).
Add cream and simmer 5 mins / 80oC / / speed 2 – MC OFF
Add crumbed cheese to the bowl. To melt and reduce the sauce, continue cooking 8 mins / 80oC / / speed 2 – MC OFF.
Pour sauce into a ThermoServer to naturally thicken for about 5 minutes prior to serving.
