Recipe's preparation

    • 1. Place fig pieces and water into TMBowl .
    • 2. Place lid on TMBowl, set timer to 10mins100*speed1 -  leave MC in.
    • 3. When finished, puree on speed7 for 10 seconds.
    • 4. Weigh sugar and add lemon juice
    • 5. Place lid on TMBowl and blend on speed 4 for 30 seconds
    • 6. Set timer for 30minutes, varomatemperature, speed 3 with strainer basket on top of lid (to prevent splatters)
    • Strainer basket may be removed when fig mixture is thick to allow for more evaporation.
    • 7. Cooking time can be by extended (10-20 minutes) and this will give a thicker more solid paste.
    • 8. When cooking time has finished check for setting point – the paste should be looking thick and when a small amount placed on a ceramic plate gells – it is ready to pour into your chosen mould.
    • 9. Pour paste into baking paper lined square cake tin 18cm x 18cm or similar. The smaller the dish the thicker the paste. Alternatively, silicone moulds or small serving size containers with lids.

    I have tried this twice, using beautiful fresh black figs. I found that even with longer cooking (50 mins @100 not Varoma), the recipe does not set. I suggest adding a packet of Jamsetta to the mix.

    Easy and very, very tasy. I added some roasted walnuts and almonds and set in silicone muffin moulds. I would cook for 25 mins, check then add extra time, as mine set quite thick and was a dark colour. Would definitley recommend and make again. tmrc_emoticons.)
