Ingredients:

  • 200 g orange sweet potato, cut into 2-3cm cubes
  • 500 g water
  • 2 tbsp Greek style yoghurt
  • 0.5 tsp honey
  • 0.25 tsp chilli powder, or to taste
  • 1 tsp TM31 Veg. stock concentrate, or to taste
  • crackers, vegetable sticks, or pita bread to serve

Recipe's preparation

    Method:
  1. 1.  Place sweet potato cubes into simmering basket, water into TM bowl and cook 20 minutes Varoma temp speed 1.

    2.  Remove simmering basket and set aside, tip water from TM bowl, replace TM bowl, add sweet potato and process 10-20 seconds speed 3-4, scraping down if necessary, until smooth.

    3.  Add yoghurt, honey, chilli powder and vegetable stock concentrate and mix 10 seconds speed 3-4, scraping down if necessary.

    4.  Adjust seasoning to taste before serving in a bowl accompanied by crackers, fresh vegetable sticks or pita bread.

Tip

This is even quicker to make if you use leftover sweet potato from a meal cooked earlier in the week.


Pita bread can be split, cut into triangles and baked unti crisp in a moderate oven for 10 minutes.
